With over 25 years of experience in upscale cuisine, our chef-owner combines culinary expertise with a passion for sharing aloha through food. From Hawaiian plate lunches to innovative fusion dishes, every bite reflects our commitment to quality, authenticity, and a spirit of 'ohana (family).

When we're not serving at iconic venues like the Dillon Amphitheater or traveling across Colorado to events and festivals, we proudly call Fairplay, CO, our home base.

Meet Dante

I am the heart and vision behind NŌ Ka'oi Foods LLC, bringing over 25 years of experience in upscale culinary arts to every dish we serve. As a chef, I’ve honed my skills in some of the finest kitchens, including two of Breckenridge’s top dining concepts, where precision, creativity, and passion are the cornerstones of my work.

Inspired by the vibrant flavors and traditions of Hawaii, I’ve set out to share a piece of the islands with the communities of Colorado. Food is my art, my craft, and my way of connecting with people. Whether it’s through our food truck, private events, or partnerships like those with the community, my goal is to create memorable experiences that go beyond the plate.
